Zucchini Parmesan Fries with Basil Pesto Mayo

Can I admit that these zucchini fries were mildly inspired by Carl’s Jnr’s Zucchini Fries? Should I fess up about that here? On the odd occasion we go to Carl’s, this is always what I get. But they are bad – and the mayo is highly processed (bit yuck) so I thought I’d have a crack at making these for myself, with the king of cheese:  Parmesan. Why add cheese? Well, that’s simple, cheese, in case I haven’t mentioned it is my favourite food – I can’t get enough of it.  Anyhow, back to the fries – so easy, delicious and we scoffed our way through these in front of the rugby, I was disappointed I hadn’t made a bigger batch. Then again, maybe it was just as well I hadn’t…   The addition of a basil pesto dip to accompany the fries is simply stellar.  

Note, if you don’t want to fry these, you can bake ’em. I’ve noted how to do that below the recipe. Enjoy!

The Body Shop is getting mega brownie points from me this month with two products I’ve developed OCD over.   I’ve got a bit of a long standing love affair with The Body Shop:  I worked at their Bond Street store in London for a while (the busiest Body Shop in the world! FACT: In one week we had the following famous people through our doors: The Queen of Spain, Boy George, Anita Roddick and Derek from Coronation Street – no shit).  

First up:  Instablur – 5 Action Perfector: I feel a bit bad featuring this as this is the second primer in a month that’s made my favourites list (last month it was this one but the price makes my bum pucker). Holy smokes, Instablur product requires a STOP PRESS: It’s my beauty find of the YEAR (so far) and I could easily write an entire blog post essay expressing my adoration for it. I’ve done a few makeup workshops and lessons lately: This is the product that’s making everyone’s “Must buy” list and I’m taking it into work next week for a demo.  Shout out must go to the fabulous, helpful and knowledgeable Rotorua Body Shop ladies who have been wowing me with their customer service.  They gave me a tester of Instablur to try out and they weren’t surprised to see me back a few days later to buy it – they know it’s the schizzle!

What’s so amazeballs about Instablur? This silicone primer does a bunch of important work: Reduces the appearance of pores; Helps hide blemishes; Smoothes out your complexion and, critically, as a foundation primer it extends the appearance of your makeup.   But, the fifth reason (as stated on the Body Shop website) is the Number 1 reason I love it – “Shine controlling 12h”… Yeah, they’ve got that nailed! I’ve been applying Instablur after my moisturiser, prior to foundation for the last two weeks and I’m delighted to report it’s totally keeping my oily skin at bay. I had a full face on at a Crossfit session this week (bad form wearing makeup, I know) and everyone commented how good my makeup looked after (and I was actually about to die).    At the very least, go in and ask for a tester! Second up is this Body Shop Colour Crush lipstick (colour 240 – Damson in Distress) I’ve been looking for a colour like this since winter started. I combed the MAC, Nars and Stila, stands at Wellington’s Kirkaldies and Stains looking for a suitable shade, to no avail. I tried Revlon, Maybelline, L’Oreal, along with every other mainstream brand under the sun, but nothing measured up to the colour in my head. So I was full of joy when I popped into the Body Shop on a whim, and there it was! Boom! It’s reasonably long-lasting (as long as any lippy lasts on me), not drying and full of bright and bold fuchsia goodness. This is the perfect winter lip brightener and seemingly my friends agree, after several of them have toddled off to get this after seeing me rock it.  My husband also comments positively on the colour when I wear it (he knows his makeup). That’s always an affirming sign.  On a side note, actually, sod it being a winter appropriate colour, I’ll be rocking this year round.  Price: NZ$27.75

Kumara, Bacon & Corn Chowder recipe

We adore this tasty kumara bacon and corn chowder.  I made some a couple of weeks ago and, upon the family whip around of “I’m going grocery shopping, does anyone need anything?  Speak now or forever hold your peace” question, my husband pipes up and asks if I can get the ingredients to make “that chowder” again. Yes, it’s a winner and the perfect weekend winter soup as well as being hearty enough to suffice as an evening meal.  It’s also a flexible recipe that lends itself into both the dairy free and Paleo camps:  Biff out the butter and use coconut oil.  Done.   Lastly, I feel like I say this a lot, but it’s an easy recipe to make too: Bonus! Slow cooker BBQ Pulled Pork with Kicked-up Slaw

We’ve been having a fair bit of pork in our house, largely as I’ve been doing a bit of dinner prep in the morning and engaging my slow cooker in an attempt to eradicate ‘6.00pm dinner madness’.   So, as a lover of my slow cooker, pulled pork, and anything with a BBQ sauce (coz everything is better with a sauce, as I’m sure Manu from MKR would agree) I’ve been trying to perfect a slow cooker pulled pork recipe, accompanied by a BBQ sauce that’s got no refined sugar (Sugar Free September last year has changed how I view sugar for life).

Anyhow, I’ve been faffing around in my kitchen trying to perfect this recipe to get it to the point where it’s blogworthy. TAAA DAAA:  My kitchen play time is done: This is a mighty fine dinner I’m rapt to be sharing with you!   Bonus too: The delicious BBQ sauce is ‘sugar free’, though I have used honey to sweeten it (I wonder if apple puree would work? I’ll try that next time).   The addition of kicked up slaw is a must in my opinion: I can’t get enough Broccoslaw (as mentioned in my recent March favourites blog post) or Sriracha Hot Sauce at the moment.

Give this a go – I reckon you’ll rate it as much as we do!

PS: Do I need to mention that a great mayonnaise to use in the Kicked Up Slaw is this one?

PPS: This meal is delicious with cauliflower mash, roast potatoes, or good old fashioned mashed spuds.  Knock yourself out.

Zucchini & Tomato Bake

zucchini tomato bakeI used to make this deliciously simple zucchini bake dish all the time but I forgot about it until I was gifted a sh*tload of zucchini last month…I had zucchini coming out the wahzoo. I beavered away in the kitchen making zucchini salad, zucchini chocolate cake, zucchini curry, zucchini fritters (anyone else thinking of Forrest Gump right about now?) when something jolted my memory and a little voice in my head said ‘hang on!’ – what about zucchini/tomato bake? And I’ve made it three times since in the last few weeks, it’s that good.

Note, it might look a tad dry on top, but trust me: Once you cut into it, the moist goodness of the melted zucchini and tomato hits you. I love the crunchy topping as a contrast. Mmmm.

Bacon, Broccoli and Cauliflower Salad

bacon broccoli and cauliflower saladI’ve been making this delicious salad for years, however it recently got an extreme makeover! My friend Emma sent me her cauliflower and broccoli salad recipe, which is really similar to mine, but it had a few extra ingredients that I just knew would take the recipe to a whole new level.  Emma’s addition of sweetness and vinegar in the creamy mayo dressing, as well as cauliflower a main ingredient, well… Oh yes. See for yourself!

Bacon, Broccoli & Cauliflower Salad Recipe

Salad ingredients
1 head broccoli, cut into small pieces
1/2 head cauliflower, cut into small pieces
8 slices streaky bacon pan fried till cripsy, cooled, then chopped into little pieces
1/2 cup Craisins (you can use raisins or sultanas too)
1/4 cup sliced almonds (you can sub with other nuts)
1/4 cup chopped walnuts (”   “)
3 tablespoons toasted sesame seeds (dry fry them in a frying pan)
½ cup red onion chopped (Top tip: Finely dice the onion, cover it in cold water, drain the water out after five minutes, pat the onion dry with a paper towel. This step takes the acidity out of the onion!)
1 red capscium, finely sliced
2 heaped tablespoons of fresh herbs (you choose, I use any of the following: Flat leaf parsley, basil, mint – use what’s on hand!) – reserve some for ganish!

Dressing
1 cup of my Homemade DIY mayonnaise (click here) – if you don’t fancy making your own mayo, Best Foods or Hellman’s Mayonnaise are your next best options
1 tablespoon cider vinegar (rice wine and standard white vinegar work too!)
1 tablespoon of runny honey

  • Place salad ingredients in a large bowl.
  • Mix all the dressing ingredients together in a separate bowl.
  • Add the dressing ingredients to the salad – mix well. Top the salad with the reserved herbs as a garnish.
  • Chill for half an hour before serving

Hollandaise Sauce – It’s easy

The thought makes me go weak at the knees and my mouth water.  Everytime I make this sauce for visitors they are wowed that I’ve made it from scratch.  The thing is, I’ve bought pre-made Hollandaise sauce and I’ve been really underwhelmed – it just doesn’t compare to the homemade version.

Unfortunately, lots of people are intimidated by making Hollandaise because it’s known for being finicky and temperamental, or to be more precise, splitting.  I’m pleased to report this easy Hollandaise sauce recipe has never split on me, far from it: It turns out perfect everytime, the only problem is reigning in how much you eat! It’s also easy – it takes two minutes for the sauce to come together, which I like, I’m not known for having the best attention span in the North Island. I think the secret with this fool-proof recipe is that it contains less butter than most other Hollandaise recipes. Before you starting high-fiving me thinking this is a calorie friendly sauce, hold fire: It’s not.  But it’s delicious. Give it a go! (more…)
