If you’ve read my Eating Like a King in Palmerston North blogpost you’ll recall that I raved about Avo Smash, the absolutely fabulous breakfast we had at Palmy North’s Tomato Cafe… I have shamelessly recreated their recipe and it rocks.
I’ve made Avo Smash a good number of times for breakfast/brunch since our Palmy trip and I’ve made variations* with great success! Here’s the recipe for you. Oh, it is great as a dip too!
Ingredients (for two servings)
1 ripe avocado
1/4 cup finely chopped fresh mint
80g feta
2 tsp dukkah (optional)
1 tablespoons of lemon juice
1 tsp olive or avocado oil
salt and pepper to taste (if you have smoked garlic salt – use this!**)
2 thick slices of your favourite grainy dark bread, toasted
- Halve the avocado, remove the stone and scoop out the greeny goodness and place in a bowl.
- Mash the avocado with a fork. Add all other ingredients. Stir to combine.
- Toast your bread. Top with the avo smash. Sprinkle with some extra mint if you want it to look super pretty.
*Mix the recipe up by: Using basil instead of mint; Replace the feta with blue cheese; Adding a side of mushrooms or roast tomatoes. This is served at Tomato Cafe with a poached egg (and we had bacon on the side). Personally, I love keeping it simple and serving some beautifully ripe fresh cherry tomatoes on the side (drizzled with a touch of avocado oil).
