I seem to spend a lot of time looking out for new recipes that are simple so my boy and I can make them together. I’ve realised I should just stop looking and stick to using the cookbook I’ve owned for the last 20+ years: The great Kiwi Edmonds Cookbook. This is their original Hokey Pokey recipe that, frankly, you just can’t beat. You need bugger-all ingredients, it’s easy, cheap to make and everyone enjoys them. Why make things complicated?!image

Ingredients
125g butter
1/2 cup white sugar
1 Tbsp golden syrup
1 Tbsp milk
1 1/2 cups flour
1 tsp  baking soda

Step 1: Preheat oven to 180°C.
Step 2: Combine butter, sugar, golden syrup and milk in a small saucepan. Heat until butter is melted and mixture is nearly boiling, stirring constantly. Remove from heat. Allow to cool until lukewarm (at this point you have caramel sauce which is amazeballs over ice cream or Sticky Date Pudding!)
Step 3: Sift flour and baking soda together. Add to the cooled mixture. Stir well. Roll tablespoonfuls of mixture into balls. Place on an ungreased baking tray, press down lightly with a fork. Bake for 15 – 20 minutes or until golden brown.
